Manhattan Sabayon
SERVES 6

INGREDIENTS:
5 Large Egg Yolks
Grated zest of one Orange
1.5 C Granulated Sugar
1 tsp. Vanilla Extract
3/4 C Rye Whiskey
1/2 C Sweet Vermouth
2 tsp. Angostura Aromatic Bitters
4 Large Egg Whites
1 oz. Semi-sweet chocolate, Shaved
6 Marachino Cherries
6 Sprigs Mint

Method:
In a medium sized mixing bowl, beat together the egg yolks, orange zest, sugar, and vanilla until thick and lemon colored. Place bowl over pot of gently simmering water.

Mix together the whiskey, vermouth, and bitters. Slowly pour in alcohol while whisking vigorously. Whisk until mixture is thick and frothy. Set a side to cool for 10 minutes. Beat egg whites to soft peaks and gently fold into yolk mixture. divide into martini glasses and garnish each with a sprinkling of chocolate, a cherry, and a sprig of mint.
