| Method: In a mixing bowl, combine the meat, herbs, 1 Tbs. of the rice, salt, pepper, and garlic. Form into 1" meatballs and set aside. In a large saucepan, combine the meatballs, water, tomato paste, remainder of the rice, salt, pepper, and hot sauce. Bring just to a boil and reduce to a simmer. Allow to simmer for one hour or until soup has reached desired consistency. Do not allow to come back to a boil. Adjust seasonings to taste. Stir in the lemon juice and serve hot with fresh mint. |
