Albondigas (Mexican Meatball Soup)
SERVES 6

INGREDIENTS:
1# Ground Beef
1/4 C White Onion, minced
3 Cloves Garlic, minced
1/4 C Fresh Mint, chopped fine
1/4 C Chopped Oregano, chopped fine
3 Tbs. Long Grain Rice
Salt and Pepper to taste
2 Quarts Water
4 oz. Tomato Paste
Hot Sauce to taste
Juice of one Lemon
Mint Sprigs to Garnish

Method:
In a mixing bowl, combine the meat, herbs, 1 Tbs. of the rice, salt, pepper, and garlic. Form into 1" meatballs and set aside.

In a large saucepan, combine the meatballs, water, tomato paste, remainder of the rice, salt, pepper, and hot sauce. Bring just to a boil and reduce to a simmer. Allow to simmer for one hour or until soup has reached desired consistency. Do not allow to come back to a boil. Adjust seasonings to taste.

Stir in the lemon juice and serve hot with fresh mint.
