Cloudberry Rugalech
SERVES 8

INGREDIENTS:
Cloudberries grow in the northernmost mountain regions of Scandinavia. They get their name because of the high elevation means they grow near the clouds. They taste like strawberries with a much more complex fruit finish. (Or should I say, “complex fruit Finnish”?)

Pick some up at your nearest Scandinavian specialty store or at IKEA.

2 Cups Flour, plus extra for dusting
Pinch of Kosher Salt
½ Cup Sugar
1.5 tsp. Baking Powder
1.5 Tbs. Shortening
1 Tbs. Vanilla
3 Eggs, lightly beaten
1 Cup Jam or Preserves (Apricot, Fig,
Peach, or Cloudberry*)
1 Fuji Apple, chopped
¼ Cup Walnuts
¼ Cup Raisins
Juice of ½ Lemon
1/3 Cup Sugar
1 Tbs. Cinnamon

Method:
-In a mixing bowl, combine the flour, salt, sugar, and baking powder. Blend in the shortening with your fingers. Add the vanilla and the eggs and mix well until a smooth dough is formed.
-In a food processor, combine the apple, -In a food processor, combine the apple, walnuts, raisins, lemon juice, sugar, and cinnamon. Blend for a few seconds until you have a thick paste.
-On a floured surface, roll half the dough into an 8” round which is about ½” thick.
-Cut each 8” round into 12 equal slices like a pizza. In the middle of each slice, place a teaspoon of the jam and a teaspoon of the filling. Roll each slice like a jellyroll. Repeat with the other half of the dough.
-Place the Rugalech on a greased baking sheet about 1” apart and bake about 12 minutes at 375F.
