Cajun Beignets
SERVES 12

INGREDIENTS:
1 packet Dried Yeast

3 ½ Cups All-Purpose Flour

1 tsp. Kosher Salt

1 ½ C Granulated Sugar

1 ¼ C Whole Milk

3 Eggs, well beaten

2 Tbs. Unsalted Butter, melted

3 Cups Vegetable Oil

Method:
-Dissolve the yeast in 4T warm water and set aside.


-In a large mixing bowl, combine the flour, salt, and sugar. Fold in the dissolved yeast,
milk, eggs, and melted butter. Mix until smooth.


-Knead dough until smooth and elastic. Cover with plastic wrap and let rest 1 hour.


-On a well-floured surface, roll out dough ¼” thick. Cut dough into 1” cubes.


-In a large saucepan, heat the vegetable oil on medium high heat for one minute. One at a time, gently drop the dough pieces into the oil. Each beignet should take about 45 seconds to turn golden brown on each side. If oil is too hot, turn down the fire. Fry until beignets are golden on both sides, and remove with a slotted spoon onto paper towels.


-Place on a platter and dust with powdered sugar. Serve warm with caramel sauce and your favorite cup of Joe.
